i should be trying to sleep right now, while the little and the boy are already passed out. instead, i’m starting a harry potter marathon and sneaking chocolate. we all have our vices.

i’m also still thinking about tonight’s dinner, panko-crusted pork chop sandwiches with bacon-fried onions and peppers. little to no planning went into these, which can either go horribly wrong or fantastically right. we got lucky. but these kinds of experiments lead to fun dialogue on what we can do next time to make it better (i.e. some kind of spicy avocado aioli for that extra kick).

just in case you were curious, 100% these cannot be considered diet food. shh…

panko-crusted pork chops w/ bacon-fried onions & peppers

ingredients

4 pork chops
1/2 cup all purpose flour
pinch of salt
1/2 tsp garlic powder
1/2 tsp onion powder
seasoning salt
2 eggs
1 cup panko crumbs
1/4 cup avocado oil

2 strips bacon
1 small red pepper
1 small yellow pepper
1 medium onion

your favourite sandwich bread

instructions

take the eggs and chops out of the fridge and bring to room temperature, and set your oven to 350 degrees.

in medium size bowl, combine dry ingredients. you can use your favourite herbs and spices too. in a separate bowl, whisk eggs. pour panko crumbs on a plate. i like to line my bowls up in beside the stove, like a production line, to minimize mess.

slice bacon, onion, & peppers. start by frying the bacon, about 5 minutes. add onions and fry until see-through. add peppers and cook until soft, stirring occasionally. you’re done when the peppers have started to brown.

while the veggies are cooking, pour 1/4 cup of avocado in medium sized frying pan over medium heat. the oil is ready when water droplets sizzle. first, dredge pork chop in flour mix, then eggs, then cover in panko crumbs. carefully place pork chop in oil & allow to cook until panko starts to turn golden brown, about 4 minutes. turn and allow to cook for another 4 or 5 minutes. remove from oil and put on foil-lined baking tray. repeat with other chops. put fried chops in the oven for 20 mins. after 20 mins, check your fattest chop – there should be no pink left. if you still see a little pink, pop them back in for another 10 mins.

we used a soda bread baguette for our sammies, but any soft bun will do, really. if you’re feeling really fancy, slice the bread and grill it in the pan you cooked your bacon and veggies in so it can absorb all that great flavour. I slathered on a little mayo et voila.

and the little has just woken up. i could have predicted that. do something while i sleep? the nerve, she says.
