confession. i hate bananas. or should i say banana-flavoured things. who decided that banana would make a good candy? ugh. so gross.
despite their horrid flavour, however, i know how great bananas are for you. and dylan seems to like them for some reason. so i kind of jumped on this recipe for a healthy oatmeal snack made with bananas.
super quick and easy to make, the only thing i think this recipe missed was the shredded coconut i know i bought but can’t remember where i stored, for the life of me.
my sister-in-law turned me onto qi’a superfood cereal from nature’s path (i found it at costco), with chia, buckwheat, hemp, almonds, cranberry, and vanilla. she mixes it into yogurt but because i also hate yogurt i decided it would make more sense to cook with it. and i was right. everything you need is in this little bag, and i like sneaking all kinds of healthy little things into my snacks and meals (our family doesn’t eat enough great stuff).
and then, of course, i had to add a sprinkle of chocolate chips because chocolate…
ingredients
2 large (or 3 med) ripe bananas optional 2 tbsps qi’a superfood cereal preheat your oven to 350 degrees. in a mixing bowl, smash ripe bananas and oatmeal together. add the rest of your ingredients and mix until moist. spoon mixture in 1 tbsp drops onto parchment-lined baking tray. pop into the oven and bake for 15 mins. they will still be a bit soft when you remove them from the oven, but will get harder as they cool. enjoy! |
